Golden Beet, Tangerine, and Mint Juice

Finding yourself seduced by the golden beets that are all over the farmer’s markets and produce displays these days? Well, here’s another juice from my Drink Your Vegetables series that makes good use of this bold and beautiful vegetable by pairing it with tangerine and a touch of mint. Try the optional turmeric and honey add-ons as well!


  • 1 large golden beet (about 1 1/2 cups of beet)
  • 1 tangerine (peeled, seeds removed)
  • 1 to 3 tablespoons chopped fresh mint (to taste)
  • 1 cup ice
  • 1 cup water


    • 1/4 teaspoon turmeric
    • honey or other sweetener, to taste



Throw in blender and press the Whole Juice button or your blender’s equivalent.
