Let’s talk about Unconditional Love. Named after my unwavering affection for brown butter and dark chocolate, this chocolate treat is part bark, part cookie – hence “barkie.” Adorned with goji berries, toasted coconut, and a zazzle of white chocolate, what’s not to love?

Next, there’s Sweet Love, because we all deserve some of that too. It’s got the same buttery, chocolate-ly base as Unconditional Love, but true to its name, it’s bathed in sugary goodness – white chocolate, milk chocolate, and dried Bing cherries.

Finally, because some of us maintain our neuroses through all major holidays, we also have Healthy Love, with a base of oats, coconut oil, sugar, and cardamon. Healthy Love is topped with 70% dark chocolate, blueberries, and a powdering of white chocolate.

These aren’t difficult to make: mix and bake the base; pour on the melted chocolate; and then add the toppings. You stick them in the fridge for about 30 minutes or so until the chocolate hardens up and then they are ready to eat. That’s it! And, both the Unconditional Love and Healthy Love are relatively low sugar treats, if you make them with 70% dark cocoa.

Note for all Recipes

These amounts make 1 barkie in a 4 1/2 inch springform pan. If you want to make a 9 inch square pan, then multiply the amounts times 5. Line the baking pan with parchment paper so the barkie squares are easier to remove.

Unconditional Love

Ingredients

Base

  • 1/4 cup ground pecans
  • 1 2/3 tablespoons melted brown butter (replace with coconut oil if vegan)
  • 1/2 tablespoon dark cocoa powder
  • 1 teaspoon sugar

Topping

  • 50 grams 70% dark chocolate
  • 1 tablespoon ribbon coconut
  • 1 tablespoon goji berries
  • 1 teaspoon white chocolate shavings

Instructions

  1. Combine the base ingredients and press into a 4 1/2 inch springform pan.
  2. Bake at 325 for about 12 minutes. It will still be soft, even runny. That’s what we want.
  3. Take it out of the oven and let it cool for 10-15 minutes.
  4. Leave the oven on, and put the coconut in to toast for about 8 to 10 minutes.
  5. Meanwhile, melt the dark chocolate.
  6. Pour the dark chocolate on the base. We want the chocolate and the base to mix together a bit, so use a knife to gently swirl them together.
  7. Top with goji berries, toasted coconut, and white chocolate.
  8. Put in the fridge for 30 minutes or so and then remove from the springform pan, slice into quarters or eighths and eat!

Sweet Love

Ingredients

Base (this is the same as Unconditional Love)

  • 1/4 cup ground pecans
  • 1 2/3 tablespoons melted brown butter (replace with coconut oil if vegan)
  • 1/2 tablespoon dark cocoa powder
  • 1 teaspoon sugar

Topping

  • 30-40 grams white chocolate
  • 30-40 grams milk chocolate
  • dried Bing cherries, chopped
  • white chocolate shavings, optional

Instructions

  1. Combine the base ingredients and press into a 4 1/2 inch springform pan.
  2. Bake at 325 for about 12 minutes. It will still be soft, even runny. That’s what we want.
  3. Take it out of the oven and let it cool for 10-15 minutes.
  4. Meanwhile, melt the white chocolate.
  5. Pour the white chocolate on and put in the fridge for a few minutes to harden.
  6. Pour the milk chocolate on top of the white. Swirl the chocolates and base together if you like.
  7. Top with the dried cherries.
  8. Put in the fridge for 30 minutes or so and then remove from springform pan, slice into quarters or eighths and eat!

Healthy Love

Ingredients

Base

  • 1/4 cup slow cook oat flakes, pulsed in blender for 10 seconds or so
  • 1 2/3 tablespoons coconut oil, melted
  • 1 teaspoon sugar
  • 1/2 teaspoon cardamom

Topping

  • 50 grams dark chocolate
  • approx. 1 teaspoon dried blueberries, chopped
  • white chocolate shavings, optional

Instructions

  1. Combine the base ingredients and press into a 4 1/2 inch springform pan.
  2. Bake at 325 for about 10 minutes.
  3. Take it out of the oven and let it cool for 10-15 minutes.
  4. Meanwhile, melt the chocolate.
  5. Pour the chocolate on.
  6. Garnish with the dried blueberries and white chocolate savings.
  7. Put in the fridge for 30 minutes or so and then remove from springform pan, slice into quarters or eighths and eat!

Here’s another garnish idea: X and O versions made with icing sugar dusting on the dark chocolate, and dark cocoa on the white chocolate.
