Just in time for Valentine’s – Unconditional Love, Sweet Love & Healthy Love – 3 delicious barkies

Part cookie, part bark, these barkies are fast and easy! Choose from either a vegan or vegetarian base and three different topping options:

  • Unconditional Love, with dark chocolate, coconut, and goji berries
  • Sweet Love, with white and milk chocolate and dried cherries
  • Healthy Love, with dark chocolate and dried blueberries

These aren’t difficult to make: mix and bake the base; pour on the melted chocolate; and then add the toppings. You stick them in the fridge for about 30 minutes or so until the chocolate hardens up and then they are ready to eat. That’s it!

 

You can totally have fun with this, mixing and matching different chocolates and toppings and coming up with your own names and combos. How would you make Naive Love? What’s in Jaded Love?  I’d love to hear what you come up with!

Note for all Recipes

These amounts make 1 barkie in a 4 1/2 inch springform pan.

Bases

Vegan Base

  • 1/4 cup slow cook oat flakes, pulsed in blender for 10 seconds or so
  • 1 2/3 tablespoons coconut oil, melted
  • 1 teaspoon sugar
  • 1/2 teaspoon cardamom

Vegetarian Base

  • 1/4 cup ground pecans
  • 1 2/3 tablespoons melted brown butter (or replace with coconut oil if vegan)
  • 1/2 tablespoon dark cocoa powder
  • 1 teaspoon sugar

Recipes

Unconditional Love

  • 50 grams 70% dark chocolate
  • 1 tablespoon ribbon coconut
  • 1 tablespoon goji berries
  • 1 teaspoon {vegan} white chocolate shavings

Instructions

  1. Combine the base ingredients and press into a 4 1/2 inch springform pan.
  2. Bake at 325 for about 12 minutes. It will still be soft, even runny. That’s what we want.
  3. Take it out of the oven and let it cool for 10-15 minutes.
  4. Leave the oven on, and put the coconut in to toast for about 8 to 10 minutes.
  5. Meanwhile, melt the dark chocolate.
  6. Pour the dark chocolate on the base. We want the chocolate and the base to mix together a bit, so use a knife to gently swirl them together.
  7. Top with goji berries, toasted coconut, and {vegan} white chocolate.
  8. Put in the fridge for 30 minutes or so and then remove from the springform pan, slice into quarters or eighths and eat!

Unconditional Love Barkie with Goji Berries and Toasted Coconut

Sweet Love

  • 30-40 grams {vegan} white chocolate
  • 30-40 grams {vegan} milk chocolate
  • dried Bing cherries, chopped
  • optional, {vegan} white chocolate shavings

Instructions

  1. Combine the base ingredients and press into a 4 1/2 inch springform pan.
  2. Bake at 325 for about 12 minutes. It will still be soft, even runny. That’s what we want.
  3. Take it out of the oven and let it cool for 10-15 minutes.
  4. Meanwhile, melt the white chocolate.
  5. Pour the white chocolate on and put in the fridge for a few minutes to harden.
  6. Pour the milk chocolate on top of the white. Swirl the chocolates and base together if you like.
  7. Top with the dried cherries.
  8. Put in the fridge for 30 minutes or so and then remove from springform pan, slice into quarters or eighths and eat!

Healthy Love

  • 50 grams dark chocolate
  • approx. 1 teaspoon dried blueberries, chopped
  • optional {vegan} white chocolate shavings

Instructions

  1. Combine the base ingredients and press into a 4 1/2 inch springform pan.
  2. Bake at 325 for about 10 minutes.
  3. Take it out of the oven and let it cool for 10-15 minutes.
  4. Meanwhile, melt the chocolate.
  5. Pour the chocolate on.
  6. Garnish with the dried blueberries and white chocolate savings.
  7. Put in the fridge for 30 minutes or so and then remove from springform pan, slice into quarters or eighths and eat!

Here’s another garnish idea: X and O versions made with icing sugar dusting on the dark chocolate, and dark cocoa on the white chocolate.
