I think this fulfills my promise to serve up a grilled cheese. Plant-eaters — you will note that there is nary a green in sight — baring the cellophane on the bacon skewer! I’m pretty sure that that doesn’t count as plant-based, but vegans, I’ve got a grilled cheeze just for you. And one for the vegetarians, too.

All the recipes are part of Menu 5 (M5) of my Make it a Meal Series, where I create plant-based menus with vegetarian and omnivore friendly options. We started out with some cheezy-battered oven fries and after I’ve finished with the grilled cheese/cheeze recipes I’ll be posting dessert, aka tangerine dreamsicles.

Alright.

Let’s talk about this sandwich. It features a hearty white bread that lets the aged cheddar take centre stage. I’ve buttered up the slices with bacon fat and spiced the outer crust with a simple smoky paprika sea salt. The whole ooey-gooey mess is topped with a crispy bacon skewer which is so much more than a garnish.

Ingredients

Per Sandwich

  • 2 slices of white bread (I used a crusty white cob bread)
  • 2 slices of bacon
  • bacon fat from cooking bacon
  • 1/4 to 1/3 cup grated old cheddar
  • smoky paprika sea salt {Combine 1 teaspoon smoky paprika with 1/2 teaspoon smoked sea salt}

Instructions

  1. Make the bacon skewers by folding 2 slices of bacon onto a wooden skewer. Place the skewer into a heavy-bottomed pan, cast-iron if available, and fry over medium heat, turning the skewer every few minutes until the bacon is to your desired doneness.
  2. Clean the bacon fat from the pan, reserving it to butter your bread.
  3. Assemble the sandwich by buttering the bread, placing the buttered side down in the pan, then adding the grated cheese, then topping with another bacon-buttered slice. Brush with smoky paprika sea salt. Grill the first side on medium heat for about 2 minutes, flip over, shake on some more salt and then grill again for another 2 minutes until the bread is toasty and the cheese is melted.
