This Vegan Broccoli Cheese Soup recipe is ridiculously easy: you steam the broccoli, make the cheeze sauce and then blitz the two together in the blender. That’s it!

Making Easy Vegan Broccoli Cheese Soup
You start by chopping your broccoli into even sized pieces and then steaming it in a large pot for about 10 minutes until it’s tender.
While your broccoli is steaming, make the cheeze sauce. If you have my 4 minute cheeze sauce mix on hand, this is just a matter of adding water to the mix, blending it, and then cooking it for a few minutes.
Even if you don’t have the mix made, the cheeze sauce is made from 4 simple ingredients, including almond flour (aka almond meal) so there’s no soaking time or other time-consuming prep work. You just combine 4 dry ingredients in a bowl.
Once your broccoli is steamed and your cheeze sauce is ready, you put them in the blender and blitz until you reach your desired level of creaminess. If necessary, you can thin it out with a little milk or water.
Eating Together Made Easy
This soup is 100% plant-based. If you’re a vegetarian or eating with someone who is, the soup is delicious garnished with some dairy-based cheese. I do this all of the time — that is use cheeze and cheese together. It’s a great way to reduce your cheese consumption.

Vegan Broccoli Cheese Soup
Ingredients
- 4 cups broccoli, chopped
- 1 cup 4 minute cheeze sauce mix + 1 1/2 cups water {See Recipe Notes for link}
- milk of choice, optionally, to thin the soup
Optionally, if you don’t have 4 minute cheeze sauce mix:
- 3/4 cup almond flour {also called almond meal, or ground blanched almonds”
- 1 1/2 cup water
- 3 tablespoons tapioca starch
- 2 tablespoons nutritional yeast
- 3/4 teaspoon salt
Optionally, for serving
- shredded cheese/cheeze of choice
- nutritional yeast
- salt, to taste
- pepper, to taste
Instructions
- In a large pot, steam the broccoli for about 10 minutes or until tender.
- Make the cheeze sauce, by combining either 4 minute cheeze sauce mix or the individual ingredients, in the blender,Blend on high for one minute.Transfer to a small saucepan and cook and stir over medium heat for about 3 minutes, until cheese sauce is thick and stretchy.
- Put the steamed broccoli and cheeze sauce in your blender and blend until it reaches your desired level of creaminess. If necessary, thin it out with a little milk or water.Taste and add salt and pepper as desired.
- Optionally, garnish with nutritional yeast, or shredded cheeze/cheese of your choice. I scattered on some crushed peppercorns for the photo, as we love pepper around here.
Notes
Storage and Reheating
You can store the soup in the fridge for 2-3 days. Reheat it over low to medium heat, stirring to remove any thickened or curdled looking bits.About 4 Minute Cheese/Cheeze Sauce Mix
This is just a pre-combined version of all of the cheese sauce ingredients, except the water. You can find the recipe for this awesome pantry staple here. I made the pantry-staple version because I was using the cheeze sauce so often, it just saved a bit of time. Then once I had it handy, I started creating a bunch of recipes that incorporate it. I can’t stop! I made this again for dinner tonight. This time it was a broc-cauli combo. Cruciferous Chowder? Brassica Bisque? The easy factor is awesome. You don’t even need a ladle – just pour from the blender!
