Ingredients
1/4cupcocoa butter
2tablespoonswhite sugar
1/4cupcoconut milk
1/2 cup milk {plant or animal, unsweetened}
1/4teaspoonpeppermint extract
To serve, optional
2tablespoonswhipped cream{coconut or dairy}
1tablespooncrushed peppermint candies
Instructions
In a small saucepan, combine cocoa butter, sugar, and coconut milk. Heat over medium low heat, stirring occasionally, until the cocoa butter is melted, and the sugar is dissolved, about 4 or 5 minutes.
Stir in the milk and peppermint extract and cook for another minute until heated through.
Serve topped with whipped cream and crushed peppermint candies.
Notes
Replacement for Cocoa Butter
If you can't find cocoa butter, you can replace it with white chocolate chips, and omit the sugar.
Storage and Reheating
This is best served hot, but you can store it safely in the fridge for a few days. The cocoa butter will start to separate when the hot chocolate is cold, but reheating it over a low temperature while stirring should bring it back together.
