Ingredients
3tablespoons olive oil
3tablespoonsfinely minced ginger
2teaspoonsdried mint
2cupscooked chickpeas(unsalted)
1cuptomato sauce(unsalted)
2cupscherry tomatoes, whole(or other small tomatoes)
150gramsfeta cheese, in a block(Use Macedonian, Greek, or Bulgarian)
drizzleolive oil
pinchdried mint
Optionally, for garnish
2tablespoonsfinely minced green onion
50gramsfeta cheese
Instructions
Preheat the oven to 375F.
In an oven-safe dish, add the olive oil, ginger, and mint and mix well. Add in the chickpeas and stir to coat them in the oil and seasonings. Stir in the tomato sauce and tomatoes.
Place the feta block in the middle of the dish and drizzle it with a bit of olive oil. Scatter on a pinch of dried mint.
Bake for 30 minutes until the tomatoes are softened and browned, and the feta is browning around the edges.
Remove from the oven and use a spoon to break the feta apart. Stir the feta into the chickpeas and tomatoes.
Optionally, garnish with chopped green onions and more feta.

Storage and Reheating
You can store this in a well-sealed container in the fridge for 2-3 days. Reheat at 275F for about 12-15 minutes, or until hot.
Vegan Replacements for Feta Cheese
We have not tried this with any of the vegan feta cheese products and are unsure how it might turn out.
