Making Vegan Broccoli Cheese Soup
- 1Start by chopping the broccoli into even-sized pieces and then steaming it in a large pot for about 10 minutes until it’s tender.
- 2While your broccoli is steaming, make the sauce. If you have Mother Mix on hand, this is just a matter of adding water and nutritional yeast to the mix, blending it, and then cooking it for a few minutes. If you don’t have the mix made, you can readily use the equivalent ingredients: almond flour, nutritional yeast, tapioca starch, and salt. See the Printable Recipe Card for the amounts
- 3Once your broccoli is steamed and your cheese sauce is ready, you put them in the blender and blitz until you reach your desired level of creaminess. If necessary, you can thin it out with a little milk or water.
- 4Serve your soup as is, or garnish with a big handful of your favourite plant-based cheese, or dairy-cheese, if you’re not vegan.
This soup is made from 100% plants. If you’re a vegetarian or eating with someone who is, it's delicious garnished with dairy cheese.

Easy Vegan Broccoli Cheese Soup
Ingredients
- 4 cups broccoli, chopped
- 1 cup Mother Mix + 1 1/2 cups water (See Recipe Instructions for link)
- 2 tablespoons nutritional yeast (Add more to taste)
- milk of choice, optionally, to thin the soup
Optionally, if you don't have the Mother Mix:
- 3/4 cup almond flour {also called almond meal, or ground blanched almonds}
- 1 1/2 cup water
- 3 tablespoons tapioca starch
- 4 tablespoons nutritional yeast (Add more to taste)
- 3/4 teaspoon salt
Optionally, for serving
- shredded cheese, of choice
- more nutritional yeast
- salt, to taste
- pepper, to taste
Instructions
- In a large pot, steam the broccoli for about 10 minutes or until tender.
- Make the cheese sauce, by combining the Mother Mix, additional nutritional yeast, and water OR the individual ingredients, in the blender.Blend on high for one minute.Transfer to a small saucepan and cook and stir over medium heat for about 5 minutes, until cheese sauce is thick and stretchy.
- Put the steamed broccoli and cheese sauce in your blender and blend until it reaches your desired level of creaminess. If necessary, thin it out with a little milk or water.Taste and add salt and pepper as desired.
- Optionally, garnish with a handful of shredded cheese of your choice, or some additional nutritional yeast.
As I have some of your 4 minute cheez sauce mix on hand, this will be even more ridiculously easy! In fact, I am going to make it tomorrow night for dinner!

I can’t stop! I made this again for dinner tonight. This time it was a broc-cauli combo. Cruciferous Chowder? Brassica Bisque? The easy factor is awesome. You don’t even need a ladle – just pour from the blender!
